Frittata Potata with Garden Fresh Salsa

Not only do I love eating frittatas, I love saying frittata.


The word dances playfully off my tongue and rightfully so…it’s Italian, the language of romance.


And it’s hard not to get romantic about this versatile dish. Add in some fresh, exotic ingredients and you’ve got a symphony of flavor to allure the taste buds.

Ooh la la.

The following recipe is complements of The Hungry Dudes, which as you may know, are hungry dudes (I love the fact that I can call them dudes and no one flinches).

Turn on Dean Martin’s Volare, sing along (oh oh oh oh) and let’s get cookin!

Frittata Potata with Garden Fresh Salsa


  • 3 eggs
  • 1/4 cup milk
  • A pinch of Chipotle Chili powder (optional)
  • Leftover veggies (I used asparagus)
  • Leftover potatoes (or fry some up; get em nice & golden crisp)
  • 1/2 C sautéed mushrooms
  • 1 C sharp cheddar cheese (or your favorite cheese, say feta or bleu)
  • Garden Fresh Gourmet Black Bean & Corn Salsa


Preheat oven to 375 degrees.

Beat eggs with salt, pepper and Chipotle Chili powder in a large bowl.

Oh oh.

Add the remaining ingredients.

Oh oh oh oh.

Pour mixture into an oven safe skillet. Cook, undisturbed, until the mixture is firm, about 20-30 minutes. If you’re feeling extra fancy, sprinkle with cheese and place it under the broiler for a few minutes until brown. The frittata is done when it’s moist but firm. Top with salsa and serve.
