When the first high-pressure processing system was delivered to Garden Fresh, the enormous machine was escorted across several states by security vehicles, so rare and special was the new technology. Now, six years later, Garden Fresh Gourmet has two HPP systems, and three shifts to run them.

HPP Technology is an innovative cold pasteurization technique which consists of subjecting food sealed in flexible, water-resistant packaging, to a high level of water pressure (up to 87,000 psi) for anywhere between a few seconds to a few minutes.  This highly innovative technology, an alternative to traditional thermal and chemical treatments, has proven to be enormously effective, enabling Garden Fresh to produce delicious products that stay fresher longer, without requiring heat pasteurization, which can destroy vital nutrients.  In short, HPP is an all-natural method of making higher quality products with dramatically extended shelf life without the use of additives or artificial preservatives.

Increasing Influence

Todd Forsten Garden Fresh’s Director of HPP Services, had never used the innovative technology before it was installed in the Michigan facility. In truth, very few people in the world have, since to date, there are only about 100 facilities worldwide employing HPP systems. Todd accepted the new challenge and now speaks with pride about the system.  He loves the uniqueness of being part of a very small group of early adopters of this groundbreaking technology.

“It’s rare- not many people can say that they have an HPP machine, we have two! That’s pretty cool!” When asked if he imagines that many other food production facilities will adopt this technology in the future, Todd does not hesitate to respond affirmatively. But for now, as usual, Garden Fresh is a forerunner, making all-natural products using the most modern, environmentally friendly technology, and finding ways to help customers make healthy choices even more delicious!
