Michigan Brewing Company Serves Up Garden Fresh Salsa

Born from the basement of the Clarkston Union, Kid Rock’s Bad Ass beer is now carefully crafted by the Michigan Brewing Company in Weberville, Michigan. This beer takes water from the Saginaw aquifer and turns it into a beer that stands out and seems familiar at the same time. It doesn’t boast flowery finishes or oaky undertones. It’s a beer that was brought up to go down easy.

But it doesn’t end there.

The Michigan Brewing Company touts a host of great beers, ales, lagers, stouts, porters and the like and many years of brewing under their belts.

And to top it all off, the brewery lauds its own Pub and Restaurant and stocks a hearty selection of Garden Fresh salsa, dips, hummus and chips.

Amen.

So, we took a fieldtrip down to the Michigan Brewing Company (MBC) to provide a tasting of our chips and salsa to their awesome staff during First Firkin Friday. MBC purists sat behind the bar, taking purposeful swigs from their frosted mugs while enjoying scoopfuls of salsa. A sip of Sunset Amber Lager, after a bite of salted tortilla chips, is like an incoming tide washing the flavor farther ashore.

Meanwhile, backstage, MBC’s own Bria and Frank fired up the brick oven, hand-crafted by beermaster, Bobby. After surveying the pizza oven, I silently sketched a blueprint for our offices back in Ferndale.

Because it’s cool.

And every office should have one.

And I want brick oven pizza.

Bria called out recipes while Frank crafted the pies. The first creation was a Mexican-inspired pizza. He rolled out the dough and spread a healthy layer of Chipotle Dip on top. Next came the cheese – two varieties – upstaged by seasoned ground beef. He slid the masterpiece, barebacked, into the fire while we gathered around the mouth of the oven, hypnotized.

Bubbles began to form and the crust changed from creamy manila to a golden brown. Frank removed the pizza and topped it with a light sprinkling of Black Bean and Corn salsa. This one was a crowd favorite.

Another chef d’oeuvre was the Hawaiian Bria Pizza. In lieu of pizza sauce, Frank used Peach Pineapple salsa and then topped it with mozzarella cheese, ham and hearty chunks of pineapple.

Ambrosial.

All of Frank and Bria’s creations were met with great enthusiasm, as everyone hovered over the pizzas, oohing and ahhhing with ever bite.

From our friends at MBC, here’s a quick and tasty recipe for a Garden Fresh-inspired pizza pie:

Hawaiian Bria

  • Pizza dough (if frozen, thaw ahead of time per package instructions)
  • Peach Pineapple salsa
  • Shredded mozzarella cheese
  • Deli ham
  • Pineapple chunks

Preheat oven to the temperature listed on the pizza crust. Roll out the dough. Spread on a thin layer of Peach Pineapple salsa. Top with mozzarella cheese, chopped deli ham and pineapple chunks. Bake for the time listed on the pizza dough package. Enjoy!
