Panko Meatball Salad with Spicy Cilantro Hummus

Today is gonna be cloudy with a chance of meatballs.

Panko meatballs, to be precise.

Panko Filled Meatballs with Garden Fresh Gourmet Spicy Cilantro Hummus

It’s time for a mediterranean-inspired dish that flatters the figure as well as the guests. This recipe comes from Dave Benjamin of The Hungry Dudes who threw this together one January eve “in an effort to try and eat a little healthier.”

Raise your meatball to good health and let’s dive in. Or if you prefer, hold the meatballs and make it vegetarian:

Panko Meatball Salad with Spicy Cilantro Hummus

Meatball Ingredients (this recipe inspired by Epicurus):

1/2 lb. ground lamb
1/2 lb. ground beef
1 egg
about 1/4 cup of Panko bread crumbs
small onion, chopped
2 cloves garlic chopped small
2 T of olive oil
1 lemon, fresh squeezed
handful of fresh mint shredded
a pinch of oregano, nutmeg, parsley, thyme, cumin, and pepper
salt and pepper

Mix all of the ingredients in a bowl. Roll the mixture into balls. Sauté in oil for about fifteen minutes. Place on a paper towel.

Salad Ingredients

mixed greens
sautéed onions and mushrooms
chopped tomatoes
chopped cucumbers
fresh cut green beans
asparagus

If you wish, you can sauté the green beans and asparagus. That’s what the Dude did.

Toss all of the ingredients with Spicy Cilantro Hummus and top with meatballs. Add a little feta cheese, if you please and enjoy a little taste of the Middle East!
